Delicious Scones ( lunchbox)

These are great because they contain little sugar or fat.

You will need
8 oz (225g) self raising flour
1 teaspoon baking powder
2oz (50g) margerine
1oz (25g) castor sugar.
7 tablespoons milk

A little extra milk for glazing.

Mix together all ingredients in a bowl until it forms a dough .
Turn onto a lightly floured surface and knead lightly.
Cut into rounds and place on a greased baking tray
Brush the tops with milk and bake in a preheated oven (220C, 425F, gas 7) for 12-15 minutes or until golden brown
This mixture makes about 10 scones if you use a 2 1/2 inch cutter.
They taste great while still warm with jam or margerine on .

For fruit scones add 2-3 oz (50-75g) currants, sultana's etc to the mixture

For cheese scones leave out the sugar and add 4 oz (125g) finely grated cheese .
1 teaspoon mustard powder
1/4 teaspoon salt and a pinch of Cayenne pepper .
