Carrot soup

Winter warming carrot soup





You will need:
14oz carrots (roughly)
1 small onion
1 stick celery
1 small leek
1 1/2 pints stock (any)
Juice of 1 small orange
1oz margerine
Salt and pepper to taste



Method

Melt the margerine in a saucepan.

Finely chop the onion and add it to the margerine, cook gently until soft.

Add the stock

Add the carrots, leek and celery all chopped.

Bring to the boil and them simmer for about 20 minutes or

until the carrots are tender.

Blend until smooth

Add the orange juice and then bring back to the boil.

Remove from the heat and add salt and pepper to taste.

Best served with fresh crusty white bread!

Sausage ratatouille mix

Another simple and quite healthy meal.

You will need (to feed 4)

8 sausages
2 tins ratatouille
Rice.
Salad

Boil some rice - as much as you need!
While the rice is boiling grill the sausages and put the two tins
of ratatouille on to simmer.

When the sausages are cooked chop them into bite sized pieces
and add to the ratatouille.
Rinse and drain the rice and add it to the ratatouille mix, add
just enough to make it a nice mixture without being stodgy.

Assemble on a plate with a bit of salad - and thats it - simple.

Spaghetti with bacon and cheese

I have just discovered this, it is the most simple meal ever!

You will need:
Spaghetti
Bacon (about 12 rashers)
Cheese (as much as you like!)
2 cans chopped tomatos
Salt and pepper
Mixed herbs
Pine nuts (optional)

Boil as much spaghetti as you need.

While the spaghetti is boiling grill the bacon and chop into
bite sized pieces.

Grate some cheese - I did quite a lot of it, at least a dinner plate full.

Toast the pine nuts if you are using them - you don't need many
because they have a really strong taste.

Put the chopped tomatos into a saucepan with some mixed herbs -
as much or as little as you like. Add some salt and pepper and
blend. Then cook it for about 5 minutes.

Assemble the spaghetti on a plate, put the bacon, cheese and
pine nuts on top, add the tomato sauce and enjoy, it's delicious!
